Sweet Potato Soufflé
Sweet Potato Soufflé is an moderately easy dinner. Made with 2 lb. small sweet potatoes, washed, 4 tbsp. butter, 4 to 5 tbsp. sugar to taste, 1/3 c. light cream and 2 eggs, beaten, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Boil sweet potatoes for about 1 hour until soft.
Drain; slip skins off and mash in large bowl.
Preheat oven to 350°.
Add butter, sugar, light cream, eggs and spices.
Pour into buttered 2 quart baking dish and bake until center of soufflé is set, 30 to 40 minutes.
Raise oven temperature to 475°.
Place marshmallows on top to cover.
Return to oven for 3 to 5 minutes to brown.
