Sweet Potato Pie
Sweet Potato Pie is an moderately easy dinner. Made with 1 1/2 c. mashed sweet potatoes, mix with beater, 1 c. sugar, 1/2 c. butter, 2 eggs, separated and 2 c. milk (one evaporated and 1 homogenized), this recipe delivers authentic, satisfying flavors. Cream butter and sugar, then add rest of ingredients, except egg whites.
Beat egg whites until stiff, but not dry.
Fold into mixture.
Pour into uncooked pie shell and bake at 425° for 15 minutes.
Reduce heat to 350° and cook for 30 minutes or until done (pie is done when a knife inserted in center comes out clean).
