Sweet Potato Fruit Salad
Sweet Potato Fruit Salad is an moderately easy dinner. Made with 3 medium sweet potatoes (about 1 lb.), 2 oranges, 1/2 c. seedless grapes, halved, 1/3 c. light raisins and 1/4 c. thinly sliced celery, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Scrub potatoes; cut off any woody portions and ends.
Cook in boiling water for 25 minutes, or just until tender; cool.
Peel and cut into 3/4-inch cubes.
Finely shred 1 teaspoon orange peel and set aside.
Peel and section oranges.
Place oranges in a large bowl.
Add potatoes, grapes, raisins, celery and nuts.
In a small bowl combine orange peel, cream cheese and honey until smooth; stir in 2 tablespoons orange juice.
Pour over mixture and toss to coat. Cover and chill.
