Sweet Potato Cups
Sweet Potato Cups is an moderately easy dinner. Made with 2 lb. oriental sweet potatoes, 3 1/2 tbsp. butter, 1 c. sugar, 2 eggs and 1/2 c. milk, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Peel oriental sweet potatoes; cover with water.
Boil and mash.
Add sugar, butter and beaten eggs to the mashed potatoes. Mix well, while potatoes are still hot.
Add milk to the mixture, little by little, mixing well to make a creamy paste.
Put the paste into 12 baking cups (2 1/2 inches).
Gently brush the surface with the mixture of egg yolks and Mirin.
Bake at 480Β° for 15 to 20 minutes, until golden on top.
