Sweet and Sour Meatballs
Sweet And Sour Meatballs is an moderately easy dinner. Made with 1 1/2 lb. lean ground beef, 1 c. fresh bread crumbs, 1 egg, slightly beaten, 4 tsp. instant beef bouillon and 1 1/3 c. apricot preserves, this recipe delivers authentic, satisfying flavors. In bowl, combine meat, crumbs, eggs and 2 teaspoons bouillon; shape into 1 1/4-inch balls.
In large skillet, brown meatballs. Remove from pan.
Pour off fat.
In skillet combine preserves, lemon juice and 2 teaspoons bouillon.
Over low heat, cook and stir 15 minutes.
Add meatballs; simmer uncovered 10 minutes. Refrigerate leftovers.
Makes about 4 dozen.
