Stuffed Zucchini
Stuffed Zucchini is an moderately easy dinner. Made with 1 1/2 lb. zucchini (about 3), 1 medium onion, chopped, 1/4 c. margarine or butter, 1 small green pepper, chopped and 1 c. boiling water, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Use enough water and salt in proportion given to cook the zucchini, about 8 to 10 minutes or until tender.
Cool slightly. Cut each in half lengthwise.
Spoon out pulp and chop coarsely. Place cut side up in ungreased baking dish.
Cook and stir onion in margarine until tender.
Add chopped pulp, green pepper, pimento and stuffing mix.
Fill the zucchini with the mix. Sprinkle each with 1 tablespoon cheese.
Bake, uncovered, at 350Β° until hot and cheese is melted, 25 to 30 minutes.
