Stuffed French Toast
Stuffed French Toast is an moderately easy dinner. Made with 1 large banana or whatever fruit you like, 3/4 c. half and half or milk, 2 large eggs, 1 tsp. vanilla and 1/4 tsp. cinnamon, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°. Cut banana into 1/4-inch thick slices.
In a bowl, whisk together half and half, eggs, vanilla, cinnamon and nutmeg.
Cut a slit into bread slices horizontally, almost in half, leaving one edge intact.
Stuff each bread slice with 4 to 6 banana slices (don't overstuff).
In a baking dish, arrange bread slices in one layer and pour half and half mixture over them.
Soak slices, turning them over once or twice to allow bread to absorb all liquid, about 15 minutes.
In a 12-inch nonstick skillet, melt butter over low heat.
Cook bread until golden, about 5 minutes on each side.
Dust each bread slice with confectioners sugar and serve warm with maple syrup.
