Stuffed Fillets
Stuffed Fillets is an easy dinner. Made with 2 medium onions, chopped, 1 tbsp. butter or margarine, 2 lb. fillets, thawed, 1 can meatless spaghetti sauce and 1 lb. fresh spinach or 1 pkg. frozen, cooked and drained, this recipe delivers authentic, satisfying flavors. Cook the onions in the butter until tender but not brown. Spread each fillet with cooked spinach.
Sprinkle with the onions. Roll up and place in a shallow, buttered baking dish.
Top with the spaghetti sauce.
Bake at 400Β° for about 20 minutes, or until fish is flaky when tested with fork.
A nice finish is a dusting of grated cheese over the top, with a minute or two under broiler to melt it a bit.
