Stuffed Baked Potatoes
Stuffed Baked Potatoes is an moderately easy dinner. Made with 3 large baking potatoes, 1 1/2 tsp. vegetable oil, 1/2 c. sliced green onions, 1/2 c. butter, divided and 1/2 c. light cream, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Rub potatoes with oil, pierce with fork and bake at 400 degrees for 1 hour, 20 minutes or until tender.
Allow to cool to touch.
Cut potatoes in half lengthwise.
Carefully scoop out pulp, leaving a thin shell.
Place pulp in large bowl.
Saute onions in 1/4 c. butter until tender.
Add to potato pulp along with light cream, sour cream, salt & pepper.
Beat until smooth, fold in cheese, stuff potato shells and place in 13X9 pan.
Melt remaining butter, drizzle over potatoes and sprinkle with paprika. Bake at 350 degrees for 20-30 minutes or until heated through.
