Stuffed Artichokes
Stuffed Artichokes is an moderately easy dinner. Made with 8 medium artichokes, 1/2 lb. boiled ham, cut up, 1 c. water, 1 egg and 1/2 tsp. salt, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Cut stems and tips off artichokes and remove all small leaves around the stem at the bottom.
Mix in a bowl the ham, salt, pepper, oil, water, egg, parsley, cheese and bread crumbs together until moist.
Press artichokes on a hard surface so the leaves spread open a little. Fill the center of the artichokes and in each leaf.
Place in a saucepan with enough water to cover artichokes halfway.
Cook slowly for about 40 minutes until tender.
May be eaten hot or cold.
