Stewed Okra, Corn and Tomatoes
Stewed Okra, Corn And Tomatoes is an moderately easy dinner. Made with 1 lb. fresh okra, 4 ears fresh corn or 1(16 oz.) can whole kernel corn, 2 large tomatoes or 1 (16 oz.) can tomatoes, 1 onion, minced and 1/2 green pepper, chopped, this recipe delivers authentic, satisfying flavors. Remove and discard stem ends from okra.
Cut each pod into 4 slices.
Cut kernels from ears of corn.
Peel and slice tomatoes. In a heavy skillet, saute onion in oil.
Remove from skillet. Saute okra until browned.
Add tomatoes, onion, green pepper, all seasonings and water.
Bring to a boil.
Reduce heat and simmer 15 minutes.
Add corn and simmer until tender.
Serves 6.
