Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. summer squash, 1/2 pt. sour cream, 1 can cream of chicken soup, 1 medium onion and 1 medium sweet pepper, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Slice squash in small pieces or blend in food processor.
Cook squash and diced onion together in small amount of water until they are slightly tender.
Drain off most of the water, leaving only a small amount.
Grate the carrot, chop the pepper and add to squash and onion.
Add chicken soup and sugar; mix well.
Fold in sour cream and 3/4 stuffing.
Add melted oleo and mix well.
Pour into slightly greased medium size baking dish.
Cook mixture with rest of stuffing.
Bake at 350Β° for 45 minutes or until brown.
