Squash Casserole
Squash Casserole is an moderately easy dinner. Made with 2 lb. squash, sliced, 2 onions, chopped, 2 eggs, 1 c. sharp cheddar cheese, grated and saltine crackers (about 10), crushed, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

In frying pan, combine shortening, squash, onions, salt and pepper.
Cook until done.
Drain well.
Pour in casserole dish. Cool about 15 minutes.
Beat eggs, then stir into squash and onions.
Put cheese on top of squash.
Sprinkle crushed saltines over cheese.
Preheat oven at 350Β° and bake for 20 minutes.
