Put in saucepan 3 tablespoons butter and 1 teaspoon onion. Cook slowly until yellow. Add 3 tablespoons flour; blend well and add 1 cup milk. Add 1 cup chopped spinach; stir in 3 well beaten egg yolks. Cook slowly for 1 minute.
Season to taste and cool 10 minutes. Beat until stiff 3 egg whites and fold gently into spinach mixture. Bake at 350° until firm (approximately 30 minutes).
