Southern Rice Pudding
Southern Rice Pudding is an moderately easy dinner. Made with 3/4 c. sugar, 2 eggs, beaten, 2 c. cooked rice, cooled (imitation gives an odd after taste that isn't good in the pudding), 1/4 c. butter, cut into 5 equal pats and cinnamon (optional), this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Preheat oven to 350Β°.
In a 2-quart bowl, beat eggs until foamy.
Slowly add sugar and continue beating until sugar is dissolved.
While stirring, add vanilla to milk, then pour mixture over eggs and sugar.
Be sure to stir well to mix all of the ingredients.
Add the cooled rice.
Be sure there are no lumps in the mixture.
Stir to continue mixing.
Add raisins (optional). Top with pats of butter around edge and middle so that it will melt evenly.
Bake in heated oven for 40 minutes until mixture is a light brown and bubbly on top.
Remove from oven and allow to cool.
Serve with cinnamon or nutmeg if desired.
