Smothered Pork Chops
Smothered Pork Chops is an easy dinner. Made with 4 to 6 (1/2-inch thick) loin pork chops, long grain rice (uncooked), 2 fresh lemons, 1 large or several small onions and 1 (10 to 11 oz.) can beef consomme, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.

Lightly skillet-brown chops and set aside.
Line bottom of shallow baking pan, large enough to add chops so they will lie flat, with raw rice.
Top with chops.
Top each chop with large onion slice, then large, unpeeled lemon slice.
Add undiluted consomme.
Cover with foil and bake at 325Β° until consomme is absorbed and chops and rice are done, approximately 1 hour. Discard lemons.
Mix onions and rice and serve as side dish with chops.
