Smoked Turkey
Smoked Turkey is an easy dinner. Made with 1 (12 to 14 lb.) turkey, 1 gal. water, 4 to 5 tbsp. liquid smoke, 1/2 c. pickling salt and 1 c. morton tender quick, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Ingredients listed.
Soak turkey 24 hours. Rinse brine and dry with paper towels.
Oil bird lightly with
Anchor neck skin.
Place turkey on rack in roaster, breast side down.
Bake at 350° for 1 hour, then at 250° for 9 to 10 hours. Do not cover.
When done, let turkey lay on breast so juice runs into breast.
I use turkey breast.
