Make a marinade by combining the egg white, cornstarch, sesame oil and salt.
Marinate the shrimp in the mixture for up to 2 hours.
When ready to prepare, heat the vegetable oil in a skillet over high heat and add the shrimp.
Stir until shrimp are barely pink.
Remove with a slotted spoon and set aside.
Remove half the oil from the skillet; add the garlic and stir for a few seconds over high heat.
Add the oyster sauce.
Return the shrimp to the skillet and cook until done.
Do not overcook.
Garnish with the scallion.
