Seafood Stuffed Zucchini
Seafood Stuffed Zucchini is an moderately easy dinner. Made with 1 lb. cooked flaked fish or crabmeat, 3 cloves crushed garlic, 1 c. seasoned dry bread crumbs, 4 medium zucchini and 3/4 c. tomato purée, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.

Cook garlic in 1/2 olive oil for 2 to 3 minutes. Add bread crumbs and stir to brown.
Remove from heat and add parsley, pepper and seafood.
Set aside. Cut squash in half lengthwise.
Scoop out center, chop and saute in 1/2 cup olive oil and onion. Add remaining ingredients and simmer for 15 minutes.
Rectangular baking dish.
Fish mixture into center zucchinis, arrange in tomato sauce. Bake at 375° until tender, about 30 minutes.
Serves 6 to 8.
