Scottish Marmalade Cake
Scottish Marmalade Cake is an moderately easy dinner. Made with 3/4 c. butter or margarine, 1/3 c. sugar, 2 large eggs, 6 tbsp. orange marmalade and 2 c. self rising flour, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cream margarine until soft and add sugar.
Beat until light and fluffy.
Add eggs one at a time, beating well after each addition. Mix in marmalade, raisins and flour.
Pour into greased and bottom-lined deep 7-inch cake pan.
Level the surface.
Bake 350 degrees for 1 to 1-1/2 hours or until a toothpick comes out clean. Cool for 15 minutes and turn out onto rack to cool completely.
