Sauteed Zucchini
Sauteed Zucchini is an moderately easy dinner. Made with 3 medium zucchini, very thinly sliced, salt, 2 tbsp. butter or olive oil, 1 clove garlic, finely minced and 1 tbsp. fresh basil, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Salt zucchini slices; let drain in colander for 1/2 hour.
Pat dry with paper towels.
Melt butter.
Add garlic; cook over low heat for a few minutes.
Add drained zucchini.
Add basil, kosher salt and pepper.
Cover and cook on low for 5 minutes, until liquid evaporates.
Sprinkle cheese over top.
