Sausage Scallopini
Sausage Scallopini is an moderately easy dinner. Made with 3 lb. italian sweet sausage, 2 cans peeled tomatoes, cut in small pieces, 2 (15 oz.) cans tomato sauce, 1 large can or 1 lb. fresh mushrooms, cut in small pieces and 2 large green peppers, cut in small pieces, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Cut sausage in pieces about 4-inches long and fry or pan-broil until cooked.
Saute onions and green peppers in oil.
Do not overcook peppers. Add mushrooms, tomatoes, tomato sauce, salt and pepper. Simmer. Cut cooked sausage into bite size pieces and add to sauce.
Cover and simmer about 1 1/2 hours.
