Sausage Ratatouille
Sausage Ratatouille is an moderately easy dinner. Made with 1 1/4 lb. sweet italian sausage, 1/4 c. water, 3 tbsp. olive oil, 2 green peppers, chopped and 1 medium eggplant, cut into bite-sized chunks, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

In a skillet, heat sausages and water to boiling.
Cover; simmer 5 minutes.
Remove cover; continue cooking, turning sausages, until browned (about 10 minutes).
Remove sausages; drain and slice.
Add oil to drippings in pan; saute green peppers, eggplant and onions until browned.
Return sausages to skillet.
Add tomatoes and their liquid, zucchini, sugar, salt and thyme.
Heat to boiling.
Reduce heat to low; cover and simmer 30 minutes.
Stir in beans; heat through.
Makes 6 servings.
