Ripe Tomato Relish
Ripe Tomato Relish is an impressive dinner. Made with 2 qt. chopped cabbage, 4 or 5 bell peppers, diced, 1/2 c. salt, 3 qt. ripe tomatoes, peeled and cut in chunks and 1 pt. chopped onion, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Combine cabbage, bell peppers and salt; let set for 1 hour, then drain.
Combine with remaining ingredients; mix well and cook for 40 minutes, stirring frequently.
Make a paste of 1/2 cup flour and 1 cup cool water to which is added some of the hot relish mixture to prevent lumping; add this to mixture, stirring rapidly until thick.
Place in hot jars and seal.
Process filled jars in a hot water bath for 10 minutes.
Yield: 6 to 8 pints.
