Rice with Pigeon Peas
Rice With Pigeon Peas is an impressive dinner. Made with 1 can pigeon peas (16 oz.), drained, 4 tbsp. tomato sauce, 10 green olives, sliced, 1/2 tomato, diced and 1/4 green pepper, finely chopped, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
In large saucepan on medium heat, add olive oil and bacon. Brown bacon.
Add garlic, onion and green pepper.
Stir often until browned.
Add tomatoes and green olives.
Stir in tomato sauce, all-purpose seasoning and cilantro.
Add peas and 2 cups water. Cover pan and boil for 1/2 hour.
Add rice and 1 cup water.
Cook on high, uncovered, for 15 minutes.
Reduce heat, cover pan and simmer until rice is done (about 20 minutes).
Stir occasionally. Yields 6 servings.
