Rice Supreme
Rice Supreme is an moderately easy dinner. Made with 1 1/2 to 2 lb. chicken parts, seasoned with salt, pepper and garlic salt, 4 c. uncle ben's converted rice, 9 c. broth from chicken, combined with water if necessary, 1/4 to 1/2 tsp. saffron and 1 c. mayonnaise, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.
Boil chicken parts; remove from pot, reserving broth.
Cool and debone chicken.
Break chicken up into large pieces; set aside.
Cook rice in chicken broth and water, adding saffron. (Rice should be bright yellow in color.) Taste liquid and season with additional salt only if necessary.
(Rice should be thoroughly done.)
Place half the cooked rice in a casserole dish. Spread chicken over layer of rice; top chicken with remaining rice.
Spread mayonnaise on top of last layer of rice.
Cover with cheese.
Bake in 350Β° oven until cheese is almost melted.
