Rice Meatballs
Rice Meatballs is an moderately easy dinner. Made with 1 lb. ground lean beef, 1/2 c. evaporated milk, 1 1/2 tsp. salt, 1/2 c. raw rice (regular) and 2 tbsp. finely cut onion, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Mix ground beef, evaporated milk, raw rice, onion and 1 teaspoon salt in a bowl.
With wet hands, shape meat mixture into 8 balls.
Put balls into skillet, about 1/2 inch apart.
Then mix tomato sauce, 1/2 teaspoon salt and water.
Save 3/4 of this mixture for sauce.
Pour rest over meatballs.
Bring to boil, then cover tightly and cook over low heat 45 minutes.
Turn meatballs twice while cooking.
When meatballs are done, remove from skillet.
Pour saved mixture into skillet and heat until steaming hot.
Serve sauce with meatballs.
