Rachel Pafford's Korean Beef
Rachel Pafford'S Korean Beef is an moderately easy dinner. Made with 4 to 5 lb. rump roast, 1 large bell pepper, 1/2 c. soy sauce, 1 large can mushrooms and 3 bunches green onions, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Slice beef into 1/8-inch slices, then cut into 2-inch wide strips.
Chop bell pepper.
Chop onions, including tops.
Put beef into large bowl with lid.
Pour in soy sauce, chopped pepper, onions, sugar and mushrooms.
Mix well; cover and let marinate in refrigerator for at least 8 hours.
Turn oven on broil; pour beef mixture into broiler pan with onions, bell pepper, mushrooms and sauce.
Place meat in a single layer.
(If pan is not large enough, 2 pans may be used, but make sure you halve the marinating ingredients, also.)
Place in oven and cook about 8 minutes or until done.
Serve hot or cold.
Serves 10.
Goes good with fried rice or stir-fried vegetables.
