Potato Soup
Potato Soup is an moderately easy dinner. Made with 6 slices bacon, 4 c. potatoes, peeled and chopped, 1 c. carrots, chopped, 1 c. celery, chopped and 1 large onion, chopped, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Cook bacon until crisp.
Reserve 3 1/2 tablespoons drippings. Set bacon aside.
In large saucepan, pour drippings.
Add potatoes, carrots, celery and onions.
Cover and cook over low heat for 20 to 30 minutes or until potatoes are tender, stirring often.
Stir in milk, salt and pepper.
Bring to a boil.
Stir together sour cream, flour and paprika.
Gradually stir about 1 cup of hot mix into sour cream mix; return to soup.
Cook and stir just until soup bubbles.
Top with crumbled bacon and serve.
