Potato Porcupines
Potato Porcupines is an easy dinner. Made with 3 medium potatoes, shredded, 1 egg, 1 heaping tbsp. flour, 1 tsp. salt and 1/2 c. shortening or oil, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Wash and peel potatoes and shred onto absorbent paper to drain.
Combine egg and flour and blend together. Immediately add shredded potatoes to egg mixture and stir until evenly mixed.
Heat shortening or oil in a large skillet until hot (375Β°).
Spoonfuls potatoes skillet.
Fry until golden brown on both sides.
