Potato Candy(Peanut Butter Swirls)

Boil several small potato cubes in pan until tender.

In small mixing bowl, put a cup of confectioners sugar and a piece of potato to the side.

Slowly mashing and stirring, mix the potato with a little of the sugar at a time.

The potato should "melt" into a liquid which mixes well with confectioners sugar.

Keep adding little pieces of potato until all is mixed into a ball. Knead the ball with confectioners sugar on your hands.

On wax paper, roll out dough with rolling pin until as long and flat as it gets.

Spread thin layer of peanut butter all over rolled out dough.

Roll into a tube-like shape.

Cut and keep refrigerated.
