Potato Cakes(Lumpe) is an easy dinner. Made with 5 c. mashed potatoes, 1 tsp. sugar, 1 tsp. salt, 4 tbsp. butter or margarine and 2 c. flour, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Cook potatoes; mash while hot.
Combine with sugar, salt and margarine.
Let cool.
When cool, add flour and mix until it becomes a thick dough.
Pinch off a ball the size of an egg. Shape into a round, rolled pie crust.
Roll until paper thin on floured cloth.
Bake on electric griddle or frypan until spotted brown on both sides.
Remove and stack on foil; cover with towel. When cool, pack in plastic bags.
May be frozen.
