Potato Bread
Potato Bread is an moderately easy dinner. Made with 2 c. mashed potatoes, 1 1/2 c. milk, scalded, 1/3 c. butter, 2 tbsp. honey and 2 tsp. salt, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.

Combine mashed potatoes, milk, butter, honey and salt. Sprinkle yeast into warm water.
Let stand for 5 minutes.
Add yeast mixture, eggs and 3 cups flour to potato mixture.
Beat with wooden spoon. Gradually add flour until dough forms.
Knead on floured surface for 10 minutes, adding more flour if necessary. Place dough in greased bowl.
Cover with towel and let rise until double.
Punch down.
Divide dough into thirds.
Shape into loaves.
Place in three 5 x 9-inch bread pans.
Cover and let rise until double.
Bake at 350Β° for 35 to 45 minutes or until golden brown. Brush tops with butter. Cool.
