Pickled Beets
Pickled Beets is an moderately easy dinner. Made with 4 qt. small beets, 3 c. vinegar, 2 c. water, 2 1/2 c. sugar and 1 stick cinnamon, this recipe delivers authentic, satisfying flavors. Packed with nutrients and delicious flavors.

Wash beets, leaving on root and 1 inch of tops.
Cover beets with water, boil, then simmer until tender. Drain; slip off skins and trim beets.
In large kettle combine vinegar, water, sugar and spices and bring to a boil.
Simmer 15 minutes. Add beets and simmer for an additional 5 minutes. Pack beets in hot jars and cover with boiling syrup, leaving 1/2 inch headspace.

Process in boiling water bath for 30 minutes.
