Pecan Pralines
Pecan Pralines is an moderately easy dinner. Made with 1 1/2 c. granulated sugar, 1/2 c. brown sugar, 4 tbsp. butter, 1/2 c. evaporated milk and 1 tsp. vanilla, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.

Butter a cookie sheet or line with wax paper.
Cook sugars and milk over medium heat, stirring until mixture starts to boil.
Add butter, pecans and soda.
Cook, stirring occasionally, until it reaches the soft ball stage (when a bit of candy mixture dropped into cold water forms a soft ball) or 238Β° on a candy thermometer. Remove from heat and beat with a spoon until mixture is creamy and begins to thicken.
Drop by teaspoonfuls onto cookie sheet. (If mixture becomes too hard, return to heat and add a little water.)
Makes 24 small pralines.
