Pear Relish
Pear Relish is an moderately easy dinner. Made with 2 qt. pears, peel, core and grind, 7 medium onions, ground (approximately 2 c.), 8 large bell peppers, ground (approximately 2 c.), 8 red hot peppers (2 tbsp. chopped fine) and 1/4 c. salt, this recipe delivers authentic, satisfying flavors. Bursting with flavor in every bite.

Mix vegetables.
Add salt and soak 1 hour; drain well.
Add turmeric, dry mustard, sugar and vinegar.
Cook 30 minutes.
Bring to a boil, then reduce heat to medium, stir occasionally.
Put in sterile glass jars and seal.
Yields 10 pints.
