Peanut Brittle
Peanut Brittle is an moderately easy dinner you can prepare in about 1 hour 36 minutes. Made with . soda, . water, . vanilla, c. sugar and c. water, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.
Butter 2 (15 1/2 x 12-inch) baking sheets.
Combine soda, water and vanilla; set aside.
Combine sugar, 1 cup water, corn syrup in large saucepan.
Cook over medium heat, stirring occasionally, to 240° by candy thermometer or when forms a soft ball when dropped into water.
Stir in peanuts and butter.
Cool until 300° (or when dropped in very cold water separates into threads which are hard and brittle).
Immediately remove from heat; stir in soda mixture thoroughly.
Pour half the candy onto warm baking sheet and quickly spread evenly about 1/4-inch thick. Cool.
Break candy into pieces.
Makes 2 pounds.
