Pasta and Ceci
Pasta And Ceci is an impressive dinner. Made with 8 slices bacon, sliced 1/2 inch thick, 1/4 c. olive oil, 2 small onions, diced, 3 to 4 cloves garlic, minced and 2 (15 oz.) cans plum tomatoes, diced, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Render bacon in quart saucepan until crisp; remove with slotted spoon, leave
4 tablespoons fat.
Add oil, onion and garlic; saute until tomatoes, juice, broth, chickpeas and rosemary.
Simmer 15 to 20 minutes or so; add tomato sauce, black pepper to taste and parsley and simmer 5 to 10 minutes to boil; add pasta. When pasta is very firm, shut off heat. (You may need to add a little water.) Let stand a minute or two covered.
Serve with grated cheese.
