Oysters Foster
Oysters Foster is an moderately easy dinner. Made with 1 small bunch fresh spinach, 1 c. champagne, 1 pt. oysters with juice, 2 tbsp. butter and 2 cloves garlic, chopped, this recipe delivers authentic, satisfying flavors. A crowd-pleaser that never disappoints.

Make a small amount of roux and set aside.
In separate pan saute garlic in butter for about 5 minutes.
Stir in champagne, cream and juice of oysters; simmer 5 minutes.
Put in oysters and lay spinach on top.
Cover and simmer just until spinach is wilted. (Do not overcook, oysters will get tough.)
Take spinach out 1st, spreading it on serving dish.
Lay oysters on top.
Add roux to remaining sauce to thicken.
Spread sauce over all and serve.
