Oyster Stew
Oyster Stew is an moderately easy dinner. Made with 2 doz. oysters, 2 tbsp. butter, 2 tbsp. flour, 1/2 tsp. salt and few grains cayenne pepper, this recipe delivers authentic, satisfying flavors. Great for entertaining guests or a cozy night in.

Inspect the oysters for bits of shell.
Chop, if desired; save the liquid.
Melt butter in a heavy bottomed saucepan.
Add flour and seasoning gradually and stir until quite free of lumps.
Add milk and oyster liquid a little at a time and stir until mixture boils.
Add oysters; simmer for 5 minutes.
If too thick, add more milk.
Season to taste and serve in a heated tureen.
When serving, top with whipped cream and parsley.
Yields 4 to 5 servings.
