Orange Carrot Cake
Orange Carrot Cake is an moderately easy dinner. Made with 1 large orange, 2 c. unsifted flour, 2 c. sugar, 2 tsp. baking powder and 2 tsp. baking soda, this recipe delivers authentic, satisfying flavors. Ideal for meal prep and leftovers taste even better.
Wash orange; cut into 8 wedges.
Remove white center; cut wedges into 3 or 4 pieces.
Remove any seeds; purée in electric blender.
In large mixing bowl, stir together flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg.
Add oil, orange purée and eggs; mix thoroughly.
Blend in carrots and nuts.
Pour into greased and floured 9 x 15 x 3-inch pan.
Bake in moderate 350° oven for 1 hour, or until cake tester comes out clean.
Remove from oven; cool cake in pan.
Cut into squares or slices.
Dust with confectioners sugar before serving.
Serves 12.
