Onion Soup
Onion Soup is an moderately easy dinner. Made with 4 or 5 large onions, peeled and sliced, 3/4 stick butter, 2 cans water, 3 cans consomme and 1/2 tsp. pepper, this recipe delivers authentic, satisfying flavors. An easy weeknight meal that comes together quickly.
Saute onions in butter; put in kettle and add water.
Cook until tender.
Add consomme, pepper and flour (mix flour with a little stock). Simmer 30 minutes.
Place a piece of hard bread (can use toasted French or Italian bread) in a bowl; top with a slice of Swiss cheese.
Pour hot soup over this; also if you wish, use shredded cheese and spread over hot soup before serving.
Makes 4 - 6 servings.
