Onion Pie
Onion Pie is an moderately easy dinner. Made with 8 c. sliced vidalia onions, 1/4 c. olive oil, 1 tsp. chopped garlic, salt and freshly ground black pepper to taste and partially baked 10-inch pie shell, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.
Combine onions, oil and garlic in a large heavy pot.
Cover and braise slowly for 40 to 45 minutes.
After 30 minutes, remove the cover.
Season with salt and pepper and cook, uncovered, until tender and golden.
Stir from time to time; do not brown.
Lift onions into pie shell with a slotted spoon to remove excess moisture.
Sprinkle with grated cheese and decorate with anchovy fillets and black olives.
