Old-Fashioned Potato Soup
Old-Fashioned Potato Soup is an moderately easy dinner. Made with 6 to 8 white potatoes, peeled and sliced, 3 medium size onions, sliced, 1 1/2 tsp. salt, 6 c. milk, scalded and 2 tbsp. chopped parsley, this recipe delivers authentic, satisfying flavors. Put the potatoes and onions in a kettle with the salt and cover with cold water (4 cups).
Bring to the boiling point. Cover and cook gently for 20 minutes.
Transfer to a blender and purΓ©e the vegetables or simply mash them to a pulp in the water. Add the milk and season to taste with salt and plenty of pepper. Garnish liberally with chopped parsley.
