Old Fashioned Irish Stew
Old Fashioned Irish Stew is an moderately easy dinner. Made with 2 1/2 lb. shoulder of lamb, 2 large carrots, 6 small onions, 2 lb. potatoes and 1 tsp. salt, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Have the meat cut in pieces as desired for serving size.
Cover with about 4 cups water (boiling); bring slowly back to boiling point.
Add the seasonings.
Add the carrots, cut in strips or thick slices; let simmer for 45 minutes.
Add onions and potatoes; let simmer until potatoes and meat are both tender, about 1 hour. Garnish with chopped parsley when serving.
