Oatmeal Raisin Bread
Oatmeal Raisin Bread is an moderately easy dinner. Made with 1/2 c. whole wheat flour, 1/2 c. brown sugar, 1 tsp. salt, 1/2 c. oleo and 1 c. quick oatmeal, this recipe delivers authentic, satisfying flavors. A classic recipe that has been enjoyed for generations.

Combine the first 6 ingredients in a large bowl. Add 2 cups boiling water. Stir to melt oleo and cool to lukewarm.
Dissolve the yeast in 1/2 cup lukewarm water and add to above mixture. Gradually stir in the flour, enough to make a soft dough.
Knead 5 to 8 minutes.
Place in a greased bowl and let rise until double in size.
Punch down.
Let rest 10 minutes. Cut dough into 2 or 3 mounds.
Roll each portion to a rectangle.
Mix the sugar and cinnamon and spread on dough.
Roll up, starting at short end. Fit into greased loaf pans.
Let raise again. Bake at 375Β° for 45 to 50 minutes. Brush with oleo while warm.
I bake in 3 loaf pans for a shorter time.
