Nancy's Irish German Potato Salad
Nancy'S Irish German Potato Salad is an moderately easy dinner. Made with 10 medium red potatoes, 2 stalks celery, chopped, 1 c. onion, chopped, 9 thick slices bacon and 1/3 c. each: cider vinegar, red wine vinegar and bacon drippings, this recipe delivers authentic, satisfying flavors. Cut bacon into 1-inch pieces and fry until crisp.
Cut potatoes into 2 to 3-inch chunks and boil with skins on.
Drain bacon and save the grease.
Chop celery and onions.
Combine both vinegars with bacon drippings; add salt, pepper, celery seed and prepared mustard.
Stir together and simmer.
