I use fresh field corn, not sweet corn.

Shuck and silk corn thoroughly.

Cut corn off cob and wash.

Put corn in plastic container 3/4 full of baking soda water.

Let soak 2 days.

Corn will swell.

In wash pot, cook corn in fresh water with salt about 6 hours (cooking hard) until tender.

Wash corn well, rubbing with hands until skins fall off.

Eat as is or salt and pepper and fry. Yum, yum!
