Mrs. A.L. Cook'S Uncooked Relish is an moderately easy dinner. Made with 7 1/2 lb. firm ripe tomatoes, 2 c. onions, chopped, 3 large red peppers, 3 large green peppers and 1 pt. vinegar, this recipe delivers authentic, satisfying flavors. Perfect for family dinners and special occasions.
Boil tomatoes, chop fine.
Peel onions and chop fine.
Remove pepper seed, chop fine.
Mix together and add salt.
Put in drain bag for 24 hours.
Mix sugar with vinegar until dissolved.
Add celery and mustard seed.
Mix with tomato pulp thoroughly.
Put in sterilized jars and seal.
Makes about 3 pints.
