Mom's Plum Duff
Mom'S Plum Duff is an moderately easy dinner. Made with 2 eggs, well beaten, 1 c. brown sugar, packed, 1/2 c. shortening, melted, 2 c. well drained, cut up, pitted cooked prunes and 1 c. flour, this recipe delivers authentic, satisfying flavors. A comforting dish that warms the soul.
Blend sugar, shortening and prunes into eggs.
Measure flour by dip-level-pour method or by sifting.
Blend flour, salt and soda; stir into prune mixture.
Pour into well-greased 1-quart steamed pudding mold (available from Williams Sonoma Stores). Secure lid of mold and steam 1 hour.
(Note
If you don't have a steamer you can use a Dutch oven filled halfway with water.) Place the mold on a rack in the middle of the pan and cover. Serve hot with Creamy Sauce.
